  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. For the crust: In a medium bowl, cream together the softened butter and 1/4 cup granulated sugar until light and fluffy. Stir in the flour and lemon zest until well combined.
  3. Press the crust mixture evenly into the bottom of the prepared baking pan.
  4. Bake the crust for 15-20 minutes, or until lightly golden brown.
  5. Meanwhile, prepare the lemon filling: In a separate bowl, whisk together the eggs and 3/4 cup granulated sugar until smooth.
  6. Whisk in the flour, lemon juice, baking powder, and salt until just combined. Do not overmix.
  7. Pour the lemon filling evenly over the baked crust.
  8. Bake for another 20-25 minutes, or until the filling is set and the edges are lightly golden.
  9. Let the lemon bars cool completely in the pan on a wire rack.
  10. Once cooled, dust generously with powdered sugar before cutting into squares.
