Amazing Yellow Squash Fritters: 1 Simple Secret

Yellow Squash Fritters

These yellow squash fritters are a delightful way to enjoy fresh, seasonal ingredients. They are crispy on the outside and tender on the inside, perfect as a side dish or a light snack.

Ingredients

Scale
  • 2 medium yellow squash, grated
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tablespoons chopped fresh chives
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Grate the yellow squash and place it in a colander. Sprinkle with a pinch of salt and let it sit for 10-15 minutes to draw out excess moisture.
  2. Firmly squeeze out as much liquid as possible from the grated squash using a clean kitchen towel or paper towels. This step is crucial for crispy fritters.
  3. In a large bowl, combine the squeezed squash, flour, Parmesan cheese, egg, chives, minced garlic, salt, and pepper. Mix until just combined.
  4. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
  5. Drop spoonfuls of the squash mixture into the hot oil, flattening them slightly with the back of a spoon to form small patties. Do not overcrowd the pan.
  6. Cook for 3-4 minutes per side, or until golden brown and cooked through.
  7. Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
  8. Serve warm with your favorite dipping sauce.

Notes

  • For extra flavor, add a pinch of paprika or a dash of hot sauce to the batter.
  • These fritters are best enjoyed fresh, but leftovers can be reheated in a toaster oven or air fryer for crispiness.
  • Experiment with different herbs like dill or parsley.
