1 cup granulated sugar
1 teaspoon baking powder

2 large eggs
1 teaspoon vanilla extract

1 cup white chocolate chips
1/2 cup crushed candy canes (optional, for topping)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the eggs, vanilla extract, peppermint extract, and melted butter.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Gently fold in the white chocolate chips.
Turn the dough out onto the prepared baking sheet and shape it into a log, about 12 inches long and 3 inches wide.
Bake for 25-30 minutes, or until the log is firm and lightly golden.
