  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup white chocolate chips
  • 1/4 cup crushed peppermint candies (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the white chocolate chips and crushed peppermint candies.
  7. Turn the dough out onto the prepared baking sheet. Shape the dough into a log about 10 inches long and 2 inches wide.
  8. Bake for 25 to 30 minutes, or until lightly golden brown. Remove from the oven and let cool on the baking sheet for 10 minutes.
  9. Reduce the oven temperature to 325°F (160°C).
  10. Carefully slice the log diagonally into 1/2-inch thick slices.
  11. Place the slices cut-side down on the baking sheet. Bake for another 10 to 12 minutes.
  12. Flip the biscotti over and bake for an additional 10 to 12 minutes until dry and crisp.
  13. Remove from the oven. While still slightly warm, sprinkle with extra crushed peppermint candies. Let cool completely before serving or storing.

Notes

  • You can substitute almond extract with more vanilla extract if you prefer.
  • Store biscotti in an airtight container at room temperature for up to one week.
  • For an extra festive look, you can drizzle melted white chocolate over the cooled biscotti.
