White Bean Kale and Sausage Soup

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups chicken or vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 bunch kale (about 5 cups chopped), stems removed
  • Salt and black pepper to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the minced garlic, thyme, rosemary, and red pepper flakes. Cook for 1 minute until fragrant.
  4. Pour in the broth and add the drained white beans and diced tomatoes. Bring the soup to a simmer.
  5. Reduce the heat to low, cover, and let it simmer for 15 minutes to allow the flavors to meld.
  6. Stir in the chopped kale. Cook until the kale wilts and becomes tender, about 5 to 7 minutes.
  7. Taste the soup and season with salt and pepper as needed.
  8. Ladle the soup into bowls and top with grated Parmesan, if desired. Serve hot.

Notes

  • You can substitute the Italian sausage with smoked sausage for a deeper flavor.
  • If you prefer a thicker soup, mash about 1/2 cup of the white beans against the side of the pot before adding the kale.
  • Rinse the kale well, especially if you buy it from the farmer’s market, to remove any grit.
