White Bean and Kale Soup

Ingredients

  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 6 cups vegetable broth
  • 2 (15-ounce) cans cannellini beans, rinsed and drained
  • 1 bunch kale, stems removed and leaves chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, thyme, and rosemary. Cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and bring to a simmer.
  5. Add cannellini beans and kale. Stir well.
  6. Cover and simmer for 15-20 minutes, or until kale is tender.
  7. Season with salt and pepper to taste.
