Whipped Feta Dip with Balsamic Roasted Grapes and Rosemary Drizzle

Make this elegant, sweet and savory dip featuring creamy whipped feta topped with warm, balsamic-glazed roasted grapes and fresh rosemary.

Ingredients

  • 1 pound block good quality feta cheese, drained
  • 8 ounces cream cheese, softened
  • 1/4 cup heavy cream
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 tablespoon fresh lemon juice
  • 1 pound red seedless grapes
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1/2 teaspoon fresh rosemary, finely chopped
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Toss the grapes with 1 tablespoon of olive oil, balsamic vinegar, and honey on a small baking sheet.
  3. Roast the grapes for 15 to 20 minutes until they soften and the edges caramelize slightly. Remove from the oven and set aside.
  4. While the grapes roast, combine the drained feta cheese, softened cream cheese, heavy cream, 2 tablespoons of olive oil, and lemon juice in a food processor.
  5. Process the mixture for 3 to 5 minutes, scraping down the sides as needed, until the dip is completely smooth and airy.
  6. Taste the whipped feta and add black pepper as desired.
  7. Spread the whipped feta evenly onto a serving platter or into a shallow bowl.
  8. Spoon the warm roasted grapes over the top of the whipped feta.
  9. Drizzle lightly with extra olive oil and sprinkle with the chopped fresh rosemary before serving.

Notes

  • For the best texture, use block feta packed in brine, not pre-crumbled feta.
  • You can prepare the whipped feta up to two days ahead and store it covered in the refrigerator. Let it come to room temperature for 30 minutes before serving.
  • Serve this dip with toasted baguette slices, pita chips, or crisp vegetable sticks like cucumber and bell pepper.
