For the Crust:
1 cup all-purpose flour
1/4 cup granulated sugar
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into cubes
For the Filling:
4 large eggs
1 1/4 cups granulated sugar
1/3 cup fresh lime juice (about 3-4 limes)
1 tablespoon lime zest (from about 2 limes)
1/4 cup all-purpose flour
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted
Instructions
Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
In a medium bowl, whisk together the flour, sugar, and salt for the crust.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Press the crust mixture evenly into the bottom of the prepared baking pan.
Bake the crust for 15-20 minutes, or until lightly golden. Remove from oven and let cool slightly.
While the crust cools, prepare the filling. In a large bowl, whisk together the eggs and sugar until well combined.
Stir in the lime juice and lime zest.
In a small bowl, whisk together the flour and salt. Add this to the egg mixture and whisk until smooth.
Gradually whisk in the melted butter until fully incorporated.
Pour the lime filling evenly over the baked crust.
Bake for 25-30 minutes, or until the filling is set and the edges are lightly golden.
Let the bars cool completely in the pan on a wire rack.
Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares.
Dust with powdered sugar before serving, if desired.
Notes
For an extra vibrant color, you can add a drop of green food coloring to the filling.
