Vegetarian Eggplant Lasagna

  • 1 large eggplant, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 15 ounces ricotta cheese
  • 1 egg, beaten
  • 1/2 cup grated Parmesan cheese
  • 12 lasagna noodles
  • 3 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brush eggplant slices with olive oil and bake for 15-20 minutes, or until tender.
  3. In a large skillet, sauté onion and garlic until softened.
  4. Add crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 10 minutes.
  5. In a bowl, mix ricotta cheese, beaten egg, and Parmesan cheese.
  6. Cook lasagna noodles according to package directions.
  7. Spread a thin layer of tomato sauce in the bottom of a 9×13 inch baking dish.
  8. Layer with noodles, ricotta mixture, eggplant slices, and mozzarella cheese.
  9. Repeat layers, ending with a layer of mozzarella cheese.
  10. Cover with foil and bake for 25 minutes.
  11. Remove foil and bake for an additional 10-15 minutes, until bubbly and golden.
