8 ounces lo mein noodles
2 tablespoons vegetable oil
1 cup broccoli florets
1 cup sliced carrots
1 cup snow peas
1 cup sliced bell peppers (any color)
1 cup sliced mushrooms
2 cloves garlic, minced
1 teaspoon grated fresh ginger
For the Sauce:
1/4 cup soy sauce
2 tablespoons oyster sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon sugar
1 tablespoon cornstarch
2 tablespoons water
Instructions
Cook lo mein noodles according to package directions. Drain and set aside.
In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, sugar, cornstarch, and water. Set aside.
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add broccoli, carrots, and snow peas. Stir-fry for 2-3 minutes until slightly tender.
Add bell peppers and mushrooms. Stir-fry for another 2-3 minutes until vegetables are crisp-tender.
Add minced garlic and grated ginger to the skillet. Stir-fry for 30 seconds until fragrant.
Pour the prepared sauce over the vegetables. Cook, stirring constantly, until the sauce thickens.
