Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients. Mix with an electric mixer on low speed until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
  5. Gradually add the wet ingredients to the dry ingredients. Mix on low speed until just combined, then increase speed to medium and beat for 2 minutes.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cupcakes cool, prepare the buttercream. In a bowl, beat the softened butter with an electric mixer until creamy.
  10. Gradually add the powdered sugar, alternating with the milk, and beat until smooth and fluffy. Stir in the vanilla extract.
  11. Once the cupcakes are completely cool, frost them with the buttercream.

  • Do not overmix the cupcake batter, as this can lead to tough cupcakes.
