Vanilla Bean Panna Cotta with Berries

A light and refreshing vanilla bean panna cotta topped with a vibrant mix of fresh berries. This dessert is perfect for a healthy sweet treat.

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and scraped, or 1 teaspoon vanilla extract
  • 1/4 cup cold water
  • 1 packet (1/4 ounce) unflavored gelatin
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. In a medium saucepan, combine the heavy cream and sugar. Add the scraped vanilla bean seeds and the pod (if using extract, add it later).
  2. Heat the cream mixture over medium heat, stirring until the sugar dissolves. Do not boil. Remove from heat.
  3. If using a vanilla bean pod, let it steep in the cream for 15-20 minutes, then remove the pod. If using vanilla extract, stir it in now.
  4. In a small bowl, sprinkle the gelatin over the cold water. Let it sit for 5-10 minutes to bloom.
  5. Gently heat the bloomed gelatin mixture until it is completely dissolved, being careful not to boil it.
  6. Gradually whisk the dissolved gelatin into the warm cream mixture until well combined.
  7. Pour the panna cotta mixture into individual serving glasses or ramekins.
  8. Refrigerate for at least 4 hours, or until firm.
  9. Top with fresh mixed berries before serving.

Notes

  • For a dairy-free option, you can try using full-fat coconut milk.
  • Adjust the sweetness to your preference.
  • Ensure the gelatin is fully dissolved to avoid lumps.
