1 large sub roll (about 3 feet long)
1/4 cup olive oil
1 tablespoon Italian seasoning
1/2 pound thinly sliced deli ham
1/2 pound thinly sliced deli turkey
1/2 pound thinly sliced salami
1/2 pound thinly sliced provolone cheese
1/2 pound thinly sliced Swiss cheese
1/2 pound thinly sliced pepperoni
1 cup shredded lettuce
1 cup sliced tomatoes
1 cup sliced onions
1/2 cup sliced black olives
1/4 cup sliced pickled peppers (optional)
1/4 cup mayonnaise
2 tablespoons Dijon mustard
Instructions
Slice the sub roll horizontally, leaving one side attached if possible to create a hinge.
Brush the cut sides of the roll with olive oil and sprinkle with Italian seasoning. Toast lightly under the broiler or in a warm oven until golden.
Spread mayonnaise on the bottom half of the roll and Dijon mustard on the top half.
Layer the meats evenly over the bottom half of the roll: ham, turkey, and salami.
Add the cheeses over the meats: provolone, Swiss, and pepperoni.
Top with lettuce, tomatoes, onions, black olives, and pickled peppers if using.
Carefully place the top half of the roll over the fillings.
Slice the sub into individual portions for serving.
