1 pound shrimp, peeled and deveined
8 ounces pasta (fettuccine or linguine work well)
2 tablespoons olive oil
1 onion, chopped
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
4 cups fresh spinach
1 1/2 cups heavy cream
1/2 cup Parmesan cheese, grated
1/4 cup chicken or vegetable broth
Salt and black pepper to taste
Red pepper flakes (optional)
Fresh basil for garnish (optional)
Instructions
Cook pasta according to package directions until al dente. Drain, reserving 1/2 cup pasta water.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
Add onion to the same skillet and cook until softened, about 3-4 minutes. Add garlic and cook for 1 minute more until fragrant.
Stir in sun-dried tomatoes and spinach. Cook until spinach wilts, about 2-3 minutes.
Pour in heavy cream and broth. Bring to a simmer, then reduce heat to low. Stir in Parmesan cheese until melted and sauce thickens slightly.
Season with salt, black pepper, and red pepper flakes if using.
Add cooked pasta and cooked shrimp to the skillet. Toss to coat everything in the creamy sauce. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
Serve immediately, garnished with fresh basil if desired.
Notes
For extra flavor, marinate the shrimp in a little garlic powder and Italian seasoning before cooking.
You can use fresh cherry tomatoes instead of sun-dried tomatoes for a different flavor profile.
Adjust the amount of red pepper flakes to your spice preference.
