Turkey Breast with Citrus and Rosemary

  • 1 (3-4 pound) boneless, skin-on turkey breast
  • 2 tablespoons olive oil
  • 1 lemon, zested and halved
  • 1 orange, zested and halved
  • 4 sprigs fresh rosemary
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey breast dry with paper towels.
  3. In a small bowl, combine olive oil, lemon zest, orange zest, minced garlic, salt, and pepper.
  4. Rub the mixture all over the turkey breast, ensuring it’s evenly coated.
  5. Place the halved lemon and orange halves inside the cavity or around the turkey breast in the roasting pan.
  6. Tuck the rosemary sprigs around the turkey.
  7. Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part.
  8. Let the turkey breast rest for 10-15 minutes before carving.

Notes

  • For crispier skin, you can increase the oven temperature to 400°F (200°C) for the last 15-20 minutes of cooking.
  • Basting the turkey with its own juices during cooking will help keep it moist.
