Ingredients

Scale
  • 6 cups mixed berries (fresh or frozen – strawberries, blueberries, raspberries, blackberries)
  • 1/2 cup granulated sugar, plus more for sprinkling
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, gently toss the mixed berries with 1/2 cup sugar, cornstarch, lemon juice, and vanilla extract. Pour the berry mixture into an 8×8 inch baking dish.
  3. In a separate medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Pour in the milk and stir until just combined. Do not overmix.
  6. Drop spoonfuls of the biscuit dough evenly over the berry mixture in the baking dish.
  7. Sprinkle a little extra sugar over the tops of the biscuits.
  8. Bake for 30-40 minutes, or until the topping is golden brown and the berry filling is bubbly.
  9. Let it cool slightly before serving. Enjoy warm!

Notes

  • If using frozen berries, do not thaw them before mixing.
  • Feel free to add a pinch of cinnamon or nutmeg to the biscuit topping for extra warmth.
  • Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra special treat.
