2 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1/4 cup olive oil
2 tablespoons lemon juice
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon turmeric powder
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon ground cinnamon
1/2 teaspoon black pepper
1 teaspoon salt
2 cups long-grain white rice
3 cups chicken broth
1/4 cup fresh lemon juice (for rice)
2 tablespoons butter
1 tablespoon olive oil (for rice)
Zest of 1 lemon
Instructions
Combine chicken pieces, 1/4 cup olive oil, 2 tablespoons lemon juice, cumin, coriander, turmeric, paprika, garlic powder, cinnamon, pepper, and salt in a bowl. Mix well to coat. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
Prepare the Lemon Rice: Rinse the rice under cold water until the water runs clear.
In a medium saucepan, melt the butter with 1 tablespoon of olive oil over medium heat. Add the rinsed rice and toast for 2 minutes, stirring constantly.
Pour in the chicken broth. Bring the mixture to a boil, then reduce heat to low, cover the pot, and simmer for 15 minutes without lifting the lid.
Remove the rice from the heat and let it stand, covered, for 10 minutes.
While the rice rests, cook the chicken. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken in a single layer (cook in batches if necessary).
Cook the chicken for 5 to 7 minutes per side, until fully cooked through and slightly charred.
Fluff the cooked rice with a fork. Stir in the 1/4 cup fresh lemon juice, lemon zest, and 1 teaspoon of salt.
Serve the cooked chicken over the Lemon Rice.
Notes
For extra flavor, thread the marinated chicken onto skewers before grilling or baking.
Serve with pita bread, sliced tomatoes, and a drizzle of tahini sauce for a complete meal.
If you prefer baking, place the chicken on a lined baking sheet and bake at 400°F (200°C) for 18 to 20 minutes.
