1 block (14 oz) extra-firm tofu, pressed and cubed
2 tablespoons soy sauce
1 tablespoon cornstarch
2 tablespoons sesame oil, divided
1 cup broccoli florets
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 cup snap peas
1/4 cup teriyaki sauce
1 tablespoon grated fresh ginger
2 cloves garlic, minced
Cooked rice for serving
Sesame seeds for garnish (optional)
Green onions, sliced, for garnish (optional)
Instructions
In a bowl, toss the cubed tofu with soy sauce and cornstarch until evenly coated.
Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the tofu and cook until golden brown and crispy on all sides. Remove tofu from the skillet and set aside.
Add the remaining 1 tablespoon of sesame oil to the skillet. Add broccoli florets, red and yellow bell peppers, and snap peas. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
Add the teriyaki sauce, grated ginger, and minced garlic to the skillet. Stir well to combine.
Return the cooked tofu to the skillet and toss everything together to coat. Cook for another 1-2 minutes until heated through.
Serve immediately over cooked rice, garnished with sesame seeds and sliced green onions if desired.
Notes
Pressing the tofu is key to achieving a crispy texture. You can use a tofu press or wrap the tofu in paper towels and place a heavy object on top for at least 30 minutes.
Feel free to add other vegetables you enjoy, such as carrots, mushrooms, or onions.
Adjust the amount of teriyaki sauce to your preference.
