  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup strong brewed coffee, cooled
  • 1/2 cup ladyfingers, finely crushed
  • 1/4 cup unsweetened cocoa powder, for coating

Instructions

  1. In a medium bowl, beat together the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  2. Gradually add the cooled coffee, mixing until just combined.
  3. Stir in the crushed ladyfingers until the mixture is well incorporated.
  4. Chill the mixture in the refrigerator for at least 30 minutes, or until firm enough to roll.
  5. Roll the chilled mixture into small balls, about 1 inch in diameter.
  6. Place the cocoa powder in a shallow dish.
  7. Gently roll each truffle in the cocoa powder until evenly coated.
  8. Place the finished truffles on a baking sheet lined with parchment paper.
  9. Refrigerate for at least 1 hour before serving to allow them to set completely.

Notes

  • For a stronger coffee flavor, use espresso.
  • You can substitute the ladyfingers with crushed shortbread cookies.
