The Trending Nectarine Butter Roast Chicken

This recipe features a whole roasted chicken infused with the sweet and tangy flavors of nectarine butter, creating a tender and juicy meal.

  • 1 whole chicken (about 3-4 lbs)
  • 2 ripe nectarines, pitted and roughly chopped
  • 1/2 cup unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, combine the chopped nectarines, softened butter, minced garlic, chopped rosemary, salt, and pepper. Blend until smooth.
  3. Pat the chicken dry with paper towels. Carefully loosen the skin over the breast and thighs, creating pockets.
  4. Spread about half of the nectarine butter mixture under the skin of the chicken. Rub the remaining butter mixture all over the outside of the chicken.
  5. Place the chicken in a roasting pan. Pour the chicken broth into the bottom of the pan.
  6. Roast for 60-80 minutes, or until an internal temperature of 165°F (74°C) is reached in the thickest part of the thigh, and the juices run clear.
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Serve with pan juices.

Notes

  • For extra crispy skin, increase oven temperature to 425°F (220°C) for the last 10-15 minutes of roasting.
  • If the skin starts to brown too quickly, loosely tent the chicken with foil.
  • You can use peaches instead of nectarines for a similar flavor profile.
