  • 8 ounces dried noodles (such as spaghetti, linguine, or rice noodles)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1 cup shredded purple cabbage
  • 1/2 cup chopped peanuts
  • 1/4 cup chopped fresh cilantro
  • For the Peanut Dressing:
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey (or maple syrup for vegan)
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 2-4 tablespoons hot water, to thin

Instructions

  1. Cook noodles according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked noodles, red bell pepper, yellow bell pepper, shredded carrots, and shredded purple cabbage.
  3. In a separate bowl, whisk together all the ingredients for the peanut dressing until smooth. Add hot water a tablespoon at a time until the dressing reaches your desired consistency.
  4. Pour the peanut dressing over the noodle and vegetable mixture. Toss gently to coat everything evenly.
  5. Garnish with chopped peanuts and fresh cilantro.
  6. Serve immediately or chill for later.

Notes

  • For a spicier dressing, add a pinch of red pepper flakes or a teaspoon of sriracha.
