1 lb salmon fillet, cut into 1-inch cubes
1/4 cup soy sauce
1/4 cup mirin
2 tablespoons brown sugar
1 tablespoon grated fresh ginger
1 clove garlic, minced
1 tablespoon sesame oil
2 cups cooked rice
1 cup broccoli florets
1 cup chopped bell peppers
1/4 cup sliced green onions
1 tablespoon toasted sesame seeds
Instructions
In a small bowl, whisk together soy sauce, mirin, brown sugar, ginger, and garlic.
In a large skillet or wok, heat sesame oil over medium-high heat.
Add salmon cubes and cook for 2-3 minutes per side until lightly browned.
Pour the teriyaki sauce over the salmon. Bring to a simmer and cook for another 2-3 minutes, or until the sauce thickens and glazes the salmon.
Add broccoli florets and bell peppers to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
Serve the teriyaki salmon and vegetables over cooked rice.
Garnish with sliced green onions and toasted sesame seeds.
