1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
1 cup teriyaki sauce, divided
1 tbsp sesame oil
1 lb broccoli florets
2 cups cooked rice, for serving
1/4 cup chopped green onions, for garnish
1 tbsp sesame seeds, for garnish
Instructions
In a bowl, toss chicken pieces with 1/2 cup teriyaki sauce. Let marinate for at least 15 minutes.
Heat sesame oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 5-7 minutes.
Add broccoli florets to the skillet. Pour in the remaining 1/2 cup teriyaki sauce.
Cook, stirring occasionally, until broccoli is tender-crisp, about 5-7 minutes.
Divide cooked rice among meal prep containers. Top with the teriyaki chicken and broccoli mixture.
Garnish with green onions and sesame seeds before serving.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce.
Feel free to substitute chicken breasts for thighs if preferred.
