1 (32 ounce) bag frozen tater tots
1 pound breakfast sausage, cooked and drained
1 cup chopped onion
1 cup chopped green bell pepper
10 large eggs
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 cups shredded cheddar cheese, divided
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Arrange half of the frozen tater tots in a single layer on the bottom of the prepared baking dish.
Spread the cooked sausage, chopped onion, and chopped green bell pepper evenly over the layer of tater tots.
Sprinkle 1 cup of the shredded cheddar cheese over the sausage and vegetable mixture.
Top with the remaining half of the tater tots, arranging them in a single layer if possible.
In a medium bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until well combined.
Pour the egg mixture slowly and evenly over the tater tots in the baking dish.
Cover the baking dish tightly with aluminum foil.
Bake for 45 minutes.
Remove the foil and sprinkle the remaining 1 cup of cheddar cheese over the top.
Return the casserole to the oven, uncovered, and bake for another 10 to 15 minutes, or until the eggs are set and the cheese is melted and lightly golden brown.
Let the casserole rest for 5 minutes before slicing and serving.
Notes
For a make-ahead version, assemble the casserole completely (steps 1 through 5), but do not add the egg mixture. Cover tightly and refrigerate for up to 24 hours. When ready to bake, add the egg mixture (step 6), cover, and add 10 minutes to the initial covered baking time.
To freeze, assemble the entire casserole (steps 1 through 6), cover tightly with plastic wrap then foil, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking, adding 10 minutes to the covered bake time.
Add cooked, crumbled bacon or diced ham with the sausage for extra flavor.
Substitute Monterey Jack or Colby cheese for some or all of the cheddar.
