Sweet Potato Hash with Spinach and Poached Eggs

Start your day right with this hearty Sweet Potato Hash packed with spinach and topped with perfectly poached eggs. It is a warming, flavorful breakfast perfect for a slow morning.

  • 1 large sweet potato, diced
  • 1 tablespoon olive oil
  • 1/2 small red onion, chopped
  • 1 clove garlic, minced
  • 2 cups fresh spinach
  • 1/4 teaspoon smoked paprika
  • Pinch of salt
  • Pinch of black pepper
  • 2 large eggs
  • 1 teaspoon white vinegar (for poaching)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the diced sweet potato and cook for 8-10 minutes, stirring occasionally, until tender and slightly browned.
  3. Stir in the red onion and cook for 3 minutes until softened.
  4. Add the minced garlic and smoked paprika. Cook for 1 minute until fragrant.
  5. Add the fresh spinach to the skillet. Cook until it wilts down, about 2 minutes. Season with salt and pepper. Keep the hash warm.
  6. While the hash cooks, prepare the poached eggs. Bring a small saucepan of water to a gentle simmer. Add the white vinegar.
  7. Crack one egg into a small bowl. Create a gentle swirl in the simmering water with a spoon. Carefully slide the egg into the center of the swirl.
  8. Cook for 3-4 minutes for a runny yolk. Remove the egg with a slotted spoon and drain excess water. Repeat with the second egg.
  9. Divide the sweet potato hash between two plates. Top each serving with one poached egg. Serve immediately.

  • You can prepare the diced sweet potato ahead of time to speed up morning prep.
  • If you prefer, you can fry or scramble the eggs instead of poaching them.
  • Use any seasonal vegetable you enjoy, like kale or bell peppers, in place of some of the spinach.
