1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
2 tablespoons olive oil
1/2 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1/4 teaspoon red pepper flakes (optional)
2 green onions, sliced, for garnish
1 tablespoon sesame seeds, for garnish
Instructions
Heat olive oil in a large skillet or wok over medium-high heat.
Add chicken pieces and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
In the same skillet, combine sweet chili sauce, soy sauce, rice vinegar, ginger, minced garlic, and red pepper flakes (if using). Bring the sauce to a simmer, stirring occasionally.
Return the cooked chicken to the skillet, tossing to coat evenly with the sauce.
Cook for another 2-3 minutes, allowing the sauce to thicken slightly and coat the chicken.
Remove from heat. Garnish with sliced green onions and sesame seeds before serving.
