  • 1.5 pounds salmon fillet
  • 1 tablespoon olive oil
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pint cherry tomatoes, halved
  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillet dry with paper towels.
  3. In a small bowl, mix together olive oil, dill, garlic powder, salt, and pepper.
  4. Brush the salmon fillet with the herb mixture.
  5. Place the salmon in the center of a large baking sheet.
  6. Arrange the cherry tomatoes, zucchini, and red bell pepper around the salmon on the baking sheet.
  7. Drizzle the vegetables with a little extra olive oil and season with salt and pepper.
  8. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  9. Garnish with fresh parsley before serving.

Notes

  • You can substitute other seasonal vegetables like asparagus or green beans.
  • For extra flavor, add lemon slices on top of the salmon before baking.
