Stuffed Jalapeño Poppers

  • 12 large jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut the jalapeños in half lengthwise and scoop out the seeds and membranes. Wear gloves to avoid irritation.
  3. In a medium bowl, combine the softened cream cheese, cheddar cheese, chives, garlic powder, salt, and pepper. Mix until well combined.
  4. Spoon the cream cheese mixture into each jalapeño half.
  5. In a shallow dish, combine the panko breadcrumbs and Parmesan cheese.
  6. Dip each stuffed jalapeño half into the breadcrumb mixture, coating both the cream cheese filling and the jalapeño flesh.
  7. Place the coated jalapeños on the prepared baking sheet.
  8. Drizzle the melted butter over the jalapeño poppers.
  9. Bake for 15-20 minutes, or until the jalapeños are tender and the breadcrumbs are golden brown and crispy.
  10. Let cool slightly before serving.

Notes

  • For milder poppers, remove all white pith and seeds from the jalapeños.
  • You can add cooked bacon bits or other seasonings to the cream cheese filling for extra flavor.
