12 large jalapeno peppers
8 ounces cream cheese, softened
4 ounces shredded cheddar cheese
2 ounces crumbled bacon, cooked and drained
1/4 cup finely chopped green onions
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons butter, melted
Instructions
Preheat your oven to 400°F (200°C).
Slice the jalapeno peppers in half lengthwise and remove the seeds and membranes.
In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, cooked bacon, green onions, garlic powder, salt, and pepper. Mix until well combined.
Spoon the cream cheese mixture evenly into each jalapeno half.
In another small bowl, mix together the panko breadcrumbs and grated Parmesan cheese.
Drizzle the melted butter over the topping mixture and toss to combine.
Sprinkle the breadcrumb mixture generously over the stuffed jalapenos.
Place the stuffed jalapenos on a baking sheet lined with parchment paper.
Bake for 15-20 minutes, or until the jalapenos are tender and the topping is golden brown and crispy.
Let them cool slightly before serving.
Notes
For milder poppers, you can remove all the seeds and membranes.
You can substitute other cheeses like Monterey Jack or pepper jack.
Add a pinch of cayenne pepper to the cream cheese mixture for extra heat.
