These stuffed baked peaches with mascarpone are a delicious and easy dessert, perfect for a special occasion or a simple weeknight treat. Ripe peaches are halved, filled with a creamy mascarpone mixture, and baked until tender and golden.

  • 4 ripe peaches
  • 1/2 cup mascarpone cheese
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon vanilla extract
  • Pinch of ground cinnamon
  • 2 tablespoons chopped nuts (pecans, walnuts, or almonds), optional
  • Fresh mint leaves for garnish, optional

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the peaches and cut them in half, removing the pits.
  3. In a small bowl, combine the mascarpone cheese, honey or maple syrup, vanilla extract, and cinnamon. Mix until smooth.
  4. Spoon the mascarpone mixture into the hollowed-out centers of each peach half.
  5. Place the stuffed peaches on a baking sheet.
  6. Bake for 20-25 minutes, or until the peaches are tender and the filling is lightly golden.
  7. If using, sprinkle with chopped nuts during the last 5 minutes of baking.
  8. Remove from the oven and let cool slightly.
  9. Garnish with fresh mint leaves, if desired, before serving.
