1 (8 ounce) package cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
1/4 cup powdered sugar
1 pound fresh strawberries, hulled and sliced
1 (10.75 ounce) package frozen pound cake, thawed
Instructions
In a medium bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy. Set aside.
In a separate large bowl, whip the heavy cream and powdered sugar until stiff peaks form.
Gently fold half of the whipped cream into the cream cheese mixture until combined. Reserve the remaining whipped cream for serving.
Slice the thawed pound cake into 1/4-inch thick slices.
Lay a piece of plastic wrap on a clean surface. Arrange the pound cake slices slightly overlapping to form a rectangular mat, about 8×10 inches. Gently press the seams together to seal.
Evenly spread the cream cheese mixture over the pound cake mat, leaving a small border at one end.
Arrange a single layer of sliced strawberries over the cream cheese mixture.
Starting from one long end, carefully roll the pound cake tightly into a log, using the plastic wrap to help guide and compact the roll.
Once rolled, wrap the log tightly in the plastic wrap and refrigerate for at least 2 hours, or until firm.
To serve, unwrap the chilled roll and slice into 1-inch thick ‘sushi’ pieces.
Serve with the reserved whipped cream and additional fresh strawberries if desired.
