Strawberry Cheesecake Bites

These Strawberry Cheesecake Bites are a delightful and easy-to-make treat. They offer the rich, creamy flavor of cheesecake with a burst of fresh strawberry, all in a convenient bite-sized portion. Perfect for parties or a sweet indulgence.

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 1/2 cup freeze-dried strawberries, crushed

Instructions

  1. In a medium bowl, beat the softened cream cheese with an electric mixer until smooth.
  2. Gradually add the granulated sugar and vanilla extract, mixing until well combined and creamy.
  3. In a separate small bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are moistened.
  4. Press the graham cracker mixture evenly into the bottom of an 8×8 inch baking pan lined with parchment paper.
  5. Spread the cream cheese mixture evenly over the graham cracker crust.
  6. Sprinkle the crushed freeze-dried strawberries over the top of the cream cheese layer.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Once firm, lift the parchment paper out of the pan and cut into bite-sized squares.

Notes

  • For an extra pop of strawberry flavor, you can add a tablespoon of strawberry puree to the cream cheese mixture.
  • If you don’t have freeze-dried strawberries, you can use fresh strawberries finely chopped, but the texture will be different.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
