1 box (15.25 oz) strawberry cake mix
2 large eggs
1/2 cup vegetable oil
1 cup powdered sugar (for rolling)
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a medium bowl, combine the strawberry cake mix, eggs, and vegetable oil. Mix with a spoon or electric mixer until a soft dough forms. Do not overmix.
Place the powdered sugar in a shallow dish.
Scoop rounded tablespoons of dough and roll each portion into a smooth ball.
Roll each dough ball completely in the powdered sugar until fully coated.
Place the coated balls about 2 inches apart on the prepared baking sheets.
Bake for 9 to 11 minutes. The cookies will look slightly underbaked in the center and develop cracks on top.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For an extra burst of flavor, add 1/2 cup of white chocolate chips to the dough mixture.
