2 boneless, skinless chicken breasts
5 oz fresh spinach, chopped
4 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1 clove garlic, minced
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, combine the chopped spinach, softened cream cheese, Parmesan cheese, and minced garlic. Season with salt and pepper. Mix well until everything is evenly incorporated.
Butterfly the chicken breasts by slicing them horizontally, almost all the way through, to create a pocket.
Generously stuff the spinach and cheese mixture into the pocket of each chicken breast.
Secure the opening with toothpicks if needed to keep the filling inside.
Drizzle the chicken breasts with olive oil and season the outside with salt and pepper.
Place the stuffed chicken breasts in a baking dish.
Bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
