Spinach and Feta Stuffing Omelette

Ingredients

  • 3 large eggs
  • 1 tablespoon milk or water
  • 1/2 cup cooked leftover stuffing
  • 1/4 cup fresh spinach, chopped
  • 2 tablespoons crumbled feta cheese
  • 1 teaspoon butter or oil
  • Salt and pepper to taste

Instructions

  1. Whisk the eggs and milk or water together in a small bowl. Season with salt and pepper.
  2. Heat the butter or oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the hot skillet. Let the edges set, about 2 minutes.
  4. Gently push the cooked egg from the edges toward the center, tilting the pan so uncooked egg flows underneath.
  5. When the top is mostly set but still slightly moist, sprinkle the stuffing, chopped spinach, and feta cheese over one half of the omelette.
  6. Fold the empty half of the omelette over the filling.
  7. Cook for another minute until the cheese melts slightly and the omelette is cooked through.
  8. Slide the omelette onto a plate and serve immediately.

Notes

  • Use any type of leftover stuffing, savory or slightly sweet works well.
  • If your stuffing is very dry, add a teaspoon of broth to moisten it before adding it to the eggs.
  • This recipe scales up easily for more servings.
