6 large eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/2 cup chopped onion
1 cup fresh spinach, roughly chopped
1/2 cup crumbled feta cheese
1/4 cup chopped fresh dill (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
Heat the olive oil in an oven-safe skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour the egg mixture over the spinach and onion. Sprinkle the crumbled feta cheese and fresh dill (if using) evenly over the top.
Cook on the stovetop for about 2-3 minutes, until the edges begin to set.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden on top.
Let the frittata cool slightly before slicing and serving.
Notes
For a richer flavor, you can add a splash of heavy cream instead of milk.
Feel free to add other vegetables like bell peppers or mushrooms to the frittata.
