1 (10 ounce) package frozen chopped spinach, thawed and squeezed very dry
1 (14 ounce) can artichoke hearts, drained and chopped
1 cup mayonnaise
1 cup sour cream
1 cup grated Parmesan cheese, plus extra for topping
1 cup shredded mozzarella cheese
1/2 cup cream cheese, softened
2 cloves garlic, minced
1/4 teaspoon black pepper
Pinch of salt
Tortilla chips, crackers, or bread for serving
Instructions
Preheat your oven to 375 degrees F (190 degrees C). Lightly grease an 8×8 inch baking dish.
In a large bowl, combine the thoroughly dried spinach, chopped artichoke hearts, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, cream cheese, minced garlic, pepper, and salt.
Mix all ingredients until they are just combined and smooth. Do not overmix.
Spread the mixture evenly into the prepared baking dish.
Sprinkle a little extra Parmesan cheese over the top of the dip.
Bake for 25 to 30 minutes, or until the dip is bubbly around the edges and lightly golden on top.
Let the dip cool for about 5 minutes before serving hot with your favorite dippers.
Notes
Squeeze every drop of water from the spinach; excess moisture will make your dip watery.
You can prepare the dip mixture a day ahead and keep it covered in the refrigerator. Add 5 extra minutes to the baking time if baking cold.
Use fresh garlic for the best flavor in this recipe.
