Spinach Artichoke Dip Bread Bowl

  • 1 round loaf of bread (like sourdough or ciabatta)
  • 1 tablespoon olive oil
  • 1 cup chopped fresh spinach
  • 1 can (14 ounces) artichoke hearts, drained and chopped
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Parmesan cheese
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut off the top of the bread loaf and hollow out the inside to create a bowl, leaving a sturdy shell.
  3. In a large bowl, combine the chopped spinach, artichoke hearts, Monterey Jack cheese, Parmesan cheese, mayonnaise, sour cream, and minced garlic.
  4. Season with salt and pepper.
  5. Mix until well combined.
  6. Spoon the mixture into the hollowed-out bread bowl.
  7. Place the bread bowl on a baking sheet.
  8. Bake for 20-25 minutes, or until the dip is hot and bubbly and the bread is lightly toasted.
  9. Serve warm, using torn pieces of the bread to scoop up the dip.
