1 tablespoon vegetable oil
2 cloves garlic, minced
1-2 Thai chilies, thinly sliced (adjust to your spice preference)
8 ounces ground chicken or protein of choice
1 tablespoon fish sauce
1 teaspoon soy sauce
1 teaspoon sugar
1 tablespoon Thai basil leaves, packed
Cooked jasmine rice, for serving
Fried egg, for serving (optional)
Instructions
Heat the vegetable oil in a wok or large skillet over medium-high heat.
Add the minced garlic and sliced Thai chilies, and stir-fry for about 30 seconds until fragrant.
Add the ground chicken to the skillet. Break it up with your spoon and cook until browned.
Stir in the fish sauce, soy sauce, and sugar. Cook for another minute, stirring to combine.
Add the Thai basil leaves and stir-fry until they are just wilted, about 30 seconds.
Serve immediately over hot jasmine rice. Top with a fried egg if desired.
Notes
You can substitute ground pork, beef, or even firm tofu for the chicken.
If you don’t have Thai basil, regular basil can be used, but the flavor will be slightly different.
Adjust the amount of chilies to control the heat level.
