Spicy Sausage and Lentil Stew

This hearty and spicy sausage and lentil stew is a perfect warming meal for a chilly day. It’s packed with flavor and easy to make, bringing a touch of Sunday joy to your week.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound spicy Italian sausage, casings removed
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken broth
  • 1 cup brown or green lentils, rinsed
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.
  2. Add the chopped onion, carrots, and celery to the pot. Cook, stirring occasionally, until softened, about 8-10 minutes.
  3. Stir in the minced garlic, dried thyme, smoked paprika, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the rinsed lentils and diced tomatoes. Bring the mixture to a boil.
  5. Reduce the heat to low, cover, and simmer for 30-40 minutes, or until the lentils are tender.
  6. Return the cooked sausage to the pot. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

  • For a milder stew, use mild Italian sausage and omit the red pepper flakes.
  • You can substitute vegetable broth for chicken broth for a vegetarian option (omit sausage).
  • This stew tastes even better the next day, as the flavors meld together.
