  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 1-2 teaspoons sriracha or other hot sauce (adjust to taste)
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions

  1. In a medium bowl, whisk together honey, lime juice, soy sauce, sriracha, minced garlic, and grated ginger.
  2. Add the chicken pieces to the bowl and toss to coat evenly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Remove chicken from the marinade, letting excess drip off. Reserve the remaining marinade.
  5. Add chicken to the hot skillet in a single layer. Cook for 3-5 minutes per side, until browned and cooked through.
  6. Pour the reserved marinade into the skillet with the cooked chicken. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens and coats the chicken.
  7. Season with salt and black pepper to taste.
  8. Remove from heat. Garnish with fresh cilantro and serve with lime wedges.
