1 pound linguine or fettuccine
1 tablespoon olive oil
1 pound large shrimp, peeled and deveined
1 onion, chopped
3 cloves garlic, minced
1 (7 ounce) can chipotle peppers in adobo sauce, minced (use more or less to taste)
1 (14.5 ounce) can diced tomatoes, undrained
1 cup chicken broth
1/2 cup heavy cream
1/4 cup fresh cilantro, chopped

Instructions
Cook pasta according to package directions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from the skillet and set aside.
Add onion to the same skillet and cook until softened, about 5 minutes. Add garlic and minced chipotle peppers, cook for 1 minute until fragrant.
Stir in diced tomatoes and chicken broth. Bring to a simmer and cook for 5-7 minutes, allowing the sauce to thicken slightly.
Reduce heat to low and stir in heavy cream. Return cooked shrimp to the skillet.
Add cooked pasta to the skillet and toss to coat with the sauce.
Stir in fresh cilantro. Season with salt and pepper to taste. Serve hot.

Adjust the amount of chipotle peppers to your preferred spice level.
For a richer sauce, use a full cup of heavy cream.
