Ingredients

Scale
  • 1 cup warm water (105-115°F)
  • 1 teaspoon sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped pickled jalapeños
  • 1 large egg, beaten
  • 2 tablespoons coarse salt (for topping)
  • 1/4 cup butter, melted

Instructions

  1. In a large bowl, combine warm water and sugar. Sprinkle yeast over the top and let it sit for 5-10 minutes until foamy.
  2. Stir in salt and olive oil. Gradually add flour, mixing until a shaggy dough forms.
  3. Turn dough out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic.
  4. Knead in shredded cheddar cheese and chopped jalapeños until evenly distributed.
  5. Place dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  6. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  7. Punch down the dough and divide it into 12 equal pieces. Roll each piece into a rope about 8 inches long.
  8. Twist each rope into a pretzel shape. Place pretzels on the prepared baking sheet.
  9. Brush pretzels with the beaten egg wash and sprinkle generously with coarse salt.
  10. Bake for 12-15 minutes, or until golden brown.
  11. While pretzels are baking, melt butter.
  12. Brush baked pretzels with melted butter. Serve warm.

Notes

  • For a spicier bite, use fresh jalapeños and remove the seeds.
  • You can substitute Monterey Jack cheese for cheddar.
  • These are best served warm, but leftovers can be reheated in the oven.
