  • ½ cup all-purpose flour
  • ⅓ cup packed light brown sugar
  • ¼ cup (½ stick) cold unsalted butter, cut into small pieces
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt for the muffins.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Add the pumpkin puree and milk to the wet ingredients and mix until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Prepare the streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon.
  8. Cut in the cold butter pieces using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  9. Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
  10. Sprinkle the streusel topping generously over the batter in each muffin cup.
  11. Bake for 20-25 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  12. Let the muffins cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
