Spiced Mulled Wine Poached Pears

  • 4 firm pears (Bosc or Anjou recommended)
  • 1 bottle (750ml) dry red wine (like Merlot or Cabernet Sauvignon)
  • 1 cup water
  • 1/2 cup granulated sugar
  • 1 orange, sliced
  • 2 cinnamon sticks
  • 6 whole cloves
  • 2 star anise
  • 1 strip orange zest

Instructions

  1. Peel the pears, leaving the stem intact. You can slice a thin piece off the bottom so they stand upright later.
  2. In a saucepan large enough to hold the pears standing up, combine the red wine, water, sugar, orange slices, cinnamon sticks, cloves, star anise, and orange zest.
  3. Bring the liquid to a gentle simmer over medium heat, stirring until the sugar dissolves completely.
  4. Carefully place the peeled pears into the simmering wine mixture. They should be mostly submerged.
  5. Reduce the heat to low, cover the pan partially, and let the pears poach for 25 to 40 minutes. Turn them occasionally so they cook evenly.
  6. The pears are done when they are tender when pierced with a fork but still hold their shape.
  7. Remove the pears carefully and set them aside.
  8. Increase the heat and boil the remaining poaching liquid rapidly until it reduces by about half and thickens slightly into a syrup. This takes about 10 to 15 minutes.
  9. Serve the warm pears drizzled generously with the reduced spiced syrup.

Notes

  • You can prepare the pears a day ahead and store them submerged in the strained poaching liquid in the refrigerator. Reheat gently before serving.
  • For an extra touch, serve with a dollop of crème fraîche or vanilla bean ice cream.
  • Taste the poaching liquid before reducing; adjust sugar if your wine is very dry.
