Ingredients
Scale
1 cup pitted Medjool dates
1 cup walnuts
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Pinch of ground cloves
1 tablespoon water (if needed)
Instructions
Place the walnuts in a food processor and pulse until they are finely chopped.
Add the pitted dates, cinnamon, ginger, nutmeg, and cloves to the food processor.
Process the mixture until it starts to come together and forms a sticky dough. If it’s too dry, add one tablespoon of water at a time and process until it reaches the desired consistency.
Roll the mixture into small balls, about 1 inch in diameter.
Place the energy balls on a baking sheet lined with parchment paper.
Chill the energy balls in the refrigerator for at least 30 minutes before serving.
Notes
Ensure your dates are soft and sticky for the best results. If they are dry, soak them in warm water for 10 minutes and then drain well before using.
You can substitute other nuts like pecans or almonds for the walnuts.
Add a sprinkle of shredded coconut or sesame seeds to coat the balls for extra texture and flavor.
