  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together the flour, cinnamon, nutmeg, ginger, cloves, baking soda, and salt.
  3. In a large bowl, beat the eggs and granulated sugar until well combined.
  4. Gradually whisk in the vegetable oil and vanilla extract until smooth.
  5. Add the grated carrots and chopped nuts (if using) to the wet ingredients and stir to combine.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake cools, prepare the frosting. In a large bowl, beat the softened cream cheese and butter until smooth and creamy.
  11. Gradually add the powdered sugar, alternating with the vanilla extract and milk or cream, until the frosting reaches your desired consistency.
  12. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.
