  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

Instructions

  1. Combine apple cider in a small saucepan. Simmer over medium heat until reduced by half. Set aside.
  2. In a heavy-bottomed saucepan, mix sugar, corn syrup, and heavy cream.
  3. Cook over medium heat, stirring until sugar dissolves.
  4. Insert a candy thermometer. Stop stirring.
  5. Heat mixture until it reaches 240°F (soft-ball stage).
  6. Remove from heat. Carefully stir in the reduced cider, butter, cinnamon, nutmeg, and salt. Stir until butter melts completely.
  7. Return the pan to medium-low heat. Continue cooking, stirring constantly, until the mixture reaches 245°F (firm-ball stage).
  8. Remove from heat. Stir in vanilla extract.
  9. Pour the mixture into a parchment-lined 8×8 inch pan.
  10. Cool completely at room temperature for several hours or until firm.
  11. Cut into small squares. Wrap individually for gifting.

Notes

  • Use high-quality apple cider for the best flavor.
  • Wipe down the sides of the pan with a wet pastry brush to prevent sugar crystallization.
  • If you prefer a chewier caramel, cook to 240°F. For a firmer caramel, cook closer to 248°F.
