Amazing Southern squash casserole: 40 mins

  • 2 pounds yellow squash, thinly sliced
  • 1 medium onion, chopped
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crushed cornflakes
  • 1/4 cup butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced yellow squash and chopped onion.
  3. In a separate bowl, mix together the cream of mushroom soup, cream of chicken soup, and sour cream.
  4. Add the soup mixture and cheddar cheese to the squash and onion. Stir well to combine.
  5. Pour the squash mixture into a 9×13 inch baking dish.
  6. In a small bowl, mix the crushed cornflakes with the melted butter.
  7. Sprinkle the buttered cornflake mixture evenly over the top of the squash casserole.
  8. Bake for 30-40 minutes, or until the casserole is bubbly and the topping is golden brown.
  9. Let it rest for a few minutes before serving.

Notes

  • You can use any type of yellow squash for this recipe.
  • If you don’t have cream of mushroom or cream of chicken soup, you can substitute with cream of celery soup.
  • For an extra cheesy casserole, add more cheddar cheese.
