Snowflake Sugar Cookie Sandwiches

  • For the Frosting:
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half, flatten each half into a disk, wrap in plastic wrap, and chill for at least 1 hour.
  6. Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness.
  8. Use snowflake-shaped cookie cutters to cut out shapes. Re-roll scraps as needed.
  9. Place cookies on prepared baking sheets, about 1 inch apart.
  10. Bake for 8-10 minutes, or until the edges are lightly golden.
  11. Let cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. While cookies cool, prepare the frosting: Cream softened butter in a bowl until smooth.
  13. Gradually add powdered sugar, alternating with milk, beating until smooth and creamy. Stir in vanilla extract.
  14. Once cookies are completely cool, spread frosting on the flat side of one cookie and top with another cookie to create a sandwich.
  15. Repeat with remaining cookies.
